My favorite's the F-15C Eagle.

««ultimate sukhoi killer«« dream on, dude. You are nowhere near to be ale to beat them
its not a fighter, but I like the TU-22M Backfire. F-15C had a good reputation during the cold war. When Israeli Air Force with F-15C meet the Syrian Air Force during the war in 1982. I prefer the F-15E rather than the F-15C. The Flanker family is a nice looking aircraft, indeed it is. What I know, they have never meet in wartime situations. F-15s have meet MIG-29 Fulcrum, but after 1990 so that will not count here and now.
And here is another Cold War fighter, one that is still in service with third world nations (and half-jokingly, a common fighter aircraft in the air arsenals of rogue nations led by crackpot dictators).

The Mikoyan-Gurevich MiG-21 Fishbed.

MiG-21PFM
MiG-21MF
MiG-21bis
ok yeah never mind about my earlier post, it has to be the Mig-21, its like the ultimate symbol of the cold war along with the Tu-95
The F-4 Phantom II. A potent symbol of Cold War aviation, it has seen action in Vietnam, Yom Kippur and Iran/Iraq wars. Some air forces still operate them today.
